Come along as we follow some clever chefs from market and menu item idea concept through the preparation stage and to the final result on the plate.



We spent some time at the market in Patong with Alex Oddy, Chef de cuisine of the Six Senses resort in Koh Yao noi. He worked his way through the market as he formulated his ideas. He seemed to have found something in the poultry section and Soon he was making a decision.
All the ingredients from the market came together perfectly on this evening. This dish was absolutely amazing, the textures balanced each other out, the center piece, the pate with its delicate texture had amazing flavors both mellow and very rich of course, the varied ingredients being subtly recognizable including  the fish stock . It all came together marvelously. What a dish.
